12 oz penne pasta

2 ripe avocados, halved and pitted

1 cup heavy cream

4 slices of crispy bacon, crumbled

2 tablespoons olive oil

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tablespoon lemon juice

Salt and black pepper, to taste

Fresh basil or parsley, for garnish

Red pepper flakes (optional), for a kick

Cook the Penne:

    Begin by bringing a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until it reaches an al dente texture. Before draining, remember to reserve about 1 cup of the pasta cooking water. Once done, drain the pasta and set aside while keeping it warm.

      Prepare the Avocado Sauce:

        In a food processor, add the halved avocados, heavy cream, minced garlic, lemon juice, and a pinch of salt and black pepper. Blend the mixture until it becomes smooth and creamy. If the sauce appears thicker than desired, gradually add a bit of the reserved pasta water until you achieve a silky consistency.

          Cook the Bacon:

            In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the crumbled bacon. Sauté the bacon until it becomes crisp and golden, typically around 5-7 minutes. Once cooked, transfer the bacon pieces to a plate lined with paper towels to absorb excess grease.

              Combine Ingredients:

                In the same skillet (with the residual bacon fat for added flavor), add the drained penne pasta. Pour the creamy avocado sauce over the pasta, tossing gently to ensure every piece is well-coated. If the sauce feels too thick, stir in a little reserved pasta water for a creamier texture.
