12 oz penne pasta

2 cups butternut squash, roasted and pureed (about 1 medium squash)

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup vegetable broth (or chicken broth)

1 cup heavy cream

1 teaspoon dried sage

½ teaspoon ground nutmeg

Salt and pepper, to taste

½ cup grated Parmesan cheese (plus extra for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Roast the Squash:

    - Preheat your oven to 400°F (200°C).

      - Cut the butternut squash in half lengthwise, scoop out the seeds, and place each half cut-side down on a parchment-lined baking sheet. Roast in the oven for 30-40 minutes until the flesh is tender and easily pierced with a fork. After removing from the oven, allow it to cool slightly, then scoop out the flesh and puree it in a blender or food processor until completely smooth.

        Cook the Pasta:

          - Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions, usually around 10-12 minutes, until it reaches al dente tenderness. Once cooked, drain the pasta in a colander, reserving a small cup of pasta water in case you need to loosen the sauce later. Set the pasta aside.

            Sauté Aromatics:

              - In a large skillet over medium heat, pour in the olive oil. Once the oil is shimmering, add the finely chopped onion. Sauté for 5-6 minutes, stirring occasionally, until the onion is softened and translucent. Next, add the minced garlic and sauté for an additional 1-2 minutes, until the garlic becomes fragrant but not browned.

                Prepare the Sauce:

                  - To the skillet with the onions and garlic, add the smooth roasted butternut squash puree. Pour in the vegetable broth and heavy cream, stirring thoroughly to combine. Bring the mixture to a gentle simmer, allowing flavors to meld together.

                    Season:

                        Combine Pasta and Sauce:

                          - Add the drained penne pasta directly into the skillet with the creamy butternut squash sauce. Toss gently to ensure that the pasta is evenly coated with the sauce. If the sauce seems too thick, add a dash of the reserved pasta water to reach your desired consistency.

                            Finish with Cheese:

                                Serve:
