1 medium onion, finely diced

2 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup whole milk (or a creamy non-dairy alternative)

1 ½ cups sharp cheddar cheese, freshly grated

2 tablespoons olive oil

Salt and freshly ground pepper to taste

½ teaspoon smoked paprika (optional for added depth)

Fresh chives or parsley, chopped, for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until the onion becomes soft and translucent. Then, stir in the minced garlic and cook for an additional minute, until it releases its fragrant aroma.
