Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

8 oz (227g) fettuccine pasta

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning (dried)

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped, for garnish (optional)

Instructions

Cook the Pasta and Broccoli: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. For the last 3 minutes of cooking, add the broccoli florets to the pot. Once cooked, drain the pasta and broccoli, setting them aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the diced chicken with salt, black pepper, and Italian seasoning. Add the chicken to the skillet in a single layer. Cook, stirring occasionally, for about 6-8 minutes or until the chicken pieces are golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.

Prepare the Alfredo Sauce: In the same skillet, add the minced garlic and sauté for around 1 minute, just until fragrant. Pour in the heavy cream, stirring continuously to blend with the garlic. Allow the cream to simmer gently for 2-3 minutes to thicken slightly.

Incorporate Cheese: Gradually whisk the grated Parmesan cheese into the cream mixture until it melts completely and the sauce becomes smooth and creamy. If the sauce seems too thick, add a splash of chicken broth or reserved pasta cooking water, stirring to achieve your desired consistency.

Combine Ingredients: Return the sautéed chicken, cooked fettuccine, and broccoli to the skillet. Gently toss everything together, ensuring that the pasta and vegetables are evenly coated with the creamy Alfredo sauce. Heat through for an additional 2-3 minutes.

Garnish and Serve: Remove the skillet from heat. If desired, sprinkle freshly chopped parsley over the top for a burst of color and flavor. Serve immediately, offering extra Parmesan cheese on the side for guests.
