8 oz (225g) penne pasta

2 tablespoons extra virgin olive oil

1 small onion, finely diced

2 garlic cloves, minced

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized cubes

2 cups broccoli florets (fresh or frozen)

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

Salt and black pepper, to taste

1 cup heavy cream

1 cup low-sodium chicken broth

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped (for garnish)

Cook the Pasta: Begin by preheating your oven to 350°F (175°C). In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely diced onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and continue to sauté for an additional minute, allowing the flavors to meld.

      Cook Chicken and Broccoli: Increase the heat slightly and add the cubed chicken to the skillet. Season with Italian seasoning, salt, and pepper. Cook, stirring occasionally, until the chicken is no longer pink, approximately 6-8 minutes. Stir in the broccoli florets and cook for another 3-4 minutes, or until the broccoli is tender-crisp.

        Combine Ingredients: Add the halved cherry tomatoes into the skillet. Pour in the heavy cream and chicken broth, bringing the mixture to a gentle simmer. Stir in half of the mozzarella cheese and all of the grated Parmesan cheese until melted and fully incorporated.
