Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

1 cup cooked white rice (or any grain of your choice)

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the bite-sized pieces of chicken. Season the chicken evenly with salt, pepper, paprika, garlic powder, and onion powder. Sauté the chicken for about 5-7 minutes, stirring occasionally, until it is golden brown and fully cooked. Once done, use a slotted spoon to remove the chicken from the skillet and set it aside on a plate.

Sauté the Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for approximately 2-3 minutes, stirring frequently, until the onion becomes translucent and aromatic. If you are using fresh broccoli, now is the time to add it. Cook for an additional 3-4 minutes until the broccoli is slightly tender. If you are using frozen broccoli, wait to add it in the next step.

Make the Cream Sauce: Pour the chicken broth and heavy cream into the skillet, stirring well to combine with the sautéed onions and garlic. Raise the heat slightly to bring the mixture to a simmer. Once simmering, add the cooked rice and stir until everything is evenly mixed. If using frozen broccoli, add it now and let the mixture cook for another 5 minutes, ensuring that the broccoli is heated through and all flavors meld beautifully.

Combine Ingredients: Add the cooked chicken back to the skillet with the creamy mixture. Gently stir everything together until every ingredient is thoroughly combined. Allow the skillet to simmer for another 2-3 minutes, enabling the flavors to deepen and infuse.

Add Cheese: Sprinkle the shredded cheddar cheese generously over the top of the skillet mixture. Cover the skillet with a lid and let it cook for an additional 2 minutes, or until the cheese is melted and bubbling.

Garnish and Serve: Remove the skillet from heat and garnish with freshly chopped parsley for a pop of color and freshness. Serve the creamy chicken and broccoli bake hot, directly from the skillet, and enjoy a delightful and comforting meal!
