2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

1 medium onion, diced finely

3 cloves garlic, minced

1 cup long-grain rice, uncooked

4 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

1/2 cup frozen peas

1/2 cup freshly grated Parmesan cheese

Fresh parsley, chopped, for garnish

Instructions
 

In a large, deep skillet, heat the olive oil over medium-high heat. Season the bite-sized chicken pieces generously with salt and pepper. Add the seasoned chicken to the skillet and cook, stirring occasionally, until the chicken is browned and fully cooked through, approximately 5 to 7 minutes. Once done, remove the chicken from the skillet and set it aside on a plate.

    In the same skillet, add the diced onion. Sauté for about 3 to 4 minutes, or until the onion becomes translucent and tender. Next, stir in the minced garlic and cook for an additional 1 minute, allowing the wonderful aroma to fill the kitchen.

      Incorporate the uncooked rice into the skillet, stirring to ensure it is evenly coated with the oil, onion, and garlic mixture. Toast the rice for about 2 minutes until it becomes slightly fragrant.

        Carefully pour in the chicken broth, followed by the heavy cream, dried thyme, and smoked paprika. Stir to combine and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for approximately 15 minutes, or until the rice is tender and has absorbed most of the liquid.

          Gently stir in the previously cooked chicken, frozen peas, and freshly grated Parmesan cheese. Mix everything thoroughly and allow it to heat together for about 5 minutes, adjusting the seasoning with salt and pepper to your taste.
