1 lb (450g) chicken breast, diced into bite-sized pieces

3 cloves garlic, finely minced

1 teaspoon Italian seasoning blend

1/2 teaspoon red pepper flakes (optional for heat)

4 cups fresh spinach, roughly chopped

1 cup ricotta cheese

1 cup heavy cream

1/2 cup grated Parmesan cheese, plus extra for topping

1 1/2 cups shredded mozzarella cheese

Salt and freshly ground pepper to taste

Fresh basil leaves, for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This will ensure that your pasta bake cooks evenly.

    Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to the package directions until it reaches al dente texture, usually about 8-10 minutes. Once done, drain and set aside.

      Sauté the Chicken: In a large skillet, warm the olive oil over medium heat. Add the diced chicken breast and season generously with salt, pepper, Italian seasoning, and red pepper flakes if desired. Sauté the chicken for about 5-7 minutes, stirring occasionally, until it’s cooked through and golden brown. Transfer the cooked chicken to a plate and set aside.
