12 oz (340g) pasta of your choice (fettuccine or penne recommended)

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

5 cups fresh spinach, washed and chopped

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Optional: Red pepper flakes for an added kick

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a rolling boil. Add your choice of pasta and cook according to the package instructions until al dente (usually about 8-10 minutes). Before draining, reserve ½ cup of the pasta water for later use. Drain the pasta and set aside in a warm bowl.

      Sauté the Chicken:

        In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the bite-sized chicken pieces, seasoning them generously with salt, pepper, and Italian seasoning. Sauté for about 6-8 minutes or until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 75°C). Once cooked, remove the chicken from the skillet and transfer it to a plate, covering it to keep warm.

          Sauté the Garlic and Spinach:

            In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds, stirring frequently, until fragrant. Add the chopped fresh spinach and stir continuously until wilted, which should take about 2-3 minutes.

              Make the Creamy Sauce:

                Pour in the chicken broth and heavy cream over the spinach and garlic mixture. Stir well, allowing it to simmer gently for about 3-4 minutes to thicken slightly.

                  Add the Chicken and Cheese:

                    Return the cooked chicken pieces to the skillet, mixing them in with the creamy sauce. Gradually stir in the grated Parmesan cheese until fully melted and the sauce is creamy. If you find the sauce too thick, add small splashes of the reserved pasta water until reaching your desired consistency.

                      Combine with Pasta:

                        Add the drained pasta to the skillet, tossing everything together to ensure the pasta is well coated in the creamy sauce. Taste and adjust the seasoning with additional salt, pepper, and optional red pepper flakes for extra heat.

                          Serve:
