8 oz rotini pasta (or your preferred pasta shape)

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced into bite-sized pieces

4 cloves garlic, minced

1 medium onion, finely chopped

5 oz fresh spinach, roughly chopped

1 cup heavy cream

1 cup chicken broth

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and freshly cracked black pepper, to taste

Red pepper flakes (optional, for added heat)

Fresh basil or parsley, chopped, for garnish

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the rotini and cook according to the package instructions until al dente, usually about 7-9 minutes. Once cooked, drain the pasta and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced chicken, seasoning it generously with salt and pepper. Sauté for about 6-8 minutes, or until the chicken pieces are golden brown and cooked through. Use a slotted spoon to remove the chicken from the skillet, setting it aside on a plate.

      Sauté the Aromatics: In the same skillet used for the chicken, add the chopped onion. Cook, stirring frequently, until the onion becomes translucent, approximately 3-4 minutes. Add the minced garlic, cooking for another 1-2 minutes until fragrant, being careful not to burn it.

        Incorporate Spinach: Add the chopped spinach to the skillet, stirring until it wilts, which should take about 2 minutes. The spinach will reduce in volume significantly.

          Create the Cream Sauce: Pour in the chicken broth and heavy cream, stirring well to combine all the ingredients. Bring the mixture to a gentle simmer. Sprinkle in the Italian seasoning and taste, adjusting with salt and pepper as needed for flavor.
