12 oz (340g) of your preferred pasta (fettuccine, penne, or spaghetti)

6 oz (170g) creamy goat cheese

1 cup (240ml) heavy cream

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup sun-dried tomatoes, roughly chopped

1 cup fresh spinach, coarsely chopped

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add your chosen pasta and cook according to the package directions until al dente. Once cooked, reserve 1 cup of the pasta water, then drain the pasta and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and red pepper flakes. Sauté for about 1 minute, stirring frequently until you can smell the garlic’s fragrance—be cautious not to let it burn, as it can become bitter.

      Add the Cream and Cheese: Lower the heat to a gentle simmer, then pour in the heavy cream. If the sauce becomes too thick, slowly incorporate some of the reserved pasta water until you achieve your desired consistency.
