1 cup Arborio rice (or any short-grain rice)

1 lb fresh mushrooms (choose from button, cremini, or a blend), sliced

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups vegetable or chicken broth

2 cups whole milk (or coconut milk for a dairy-free version)

2 tbsp olive oil

1 tbsp butter

1 tsp dried thyme

1 tsp dried oregano

Salt and black pepper to taste

Fresh parsley or chives for garnish

Optional: Grated Parmesan cheese for serving

Sauté the Aromatics: In a large, heavy-bottomed pot, heat the olive oil and butter over medium heat. Once the butter has melted, add the finely chopped onion. Sauté the onion for about 5 minutes, or until it becomes translucent and soft. Next, add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
