Creamy Mushroom Risotto with Peas and Cheese

1 ½ cups Arborio rice

4 cups vegetable or chicken broth

1 cup white wine (optional)

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups fresh mushrooms (such as cremini or shiitake), sliced

1 cup frozen peas

1 cup grated Parmesan cheese

½ cup heavy cream

4 tablespoons unsalted butter

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Broth: In a medium saucepan, warm the vegetable or chicken broth over low heat. Ensure it stays hot but does not boil while you're making the risotto, as this will help with the cooking process.

    Sauté Aromatics: In a large, heavy-bottomed skillet or saucepan, heat the olive oil along with 2 tablespoons of butter over medium heat. Once melted, add the finely chopped onion and minced garlic. Sauté for 3-4 minutes until softened and fragrant, taking care not to allow them to brown as this can affect the flavor.

      Cook the Mushrooms: Add the sliced mushrooms to the pan and sauté for around 5-7 minutes. Cook until the mushrooms are tender, have released their moisture, and turned a lovely golden brown. Season them lightly with salt and pepper to enhance the flavors.

        Toast the Rice: Pour in the Arborio rice, stirring it gently to coat the grains in the buttery mixture. Cook for 2-3 minutes, stirring frequently until the rice is slightly toasted and translucent at the edges, which will enhance its flavor.

          Deglaze the Pan: If using wine, pour it into the skillet now, allowing it to simmer. Stir constantly until most of the wine is absorbed by the rice. This will add depth and complexity to your risotto.

            Add Broth Gradually: Begin adding the warm broth to the rice, one ladle at a time. Stir the rice continuously, waiting for all the liquid to be absorbed before adding the next ladle. This stirring technique releases the starches in the rice, yielding a creamy risotto. This step will take about 20-25 minutes; keep an eye on the consistency of the rice.

              Incorporate Peas: When the rice is just about done (it should be creamy but still slightly firm to the bite), stir in the frozen peas. Cook for an additional 5 minutes to heat the peas through.

                Finish with Cream & Cheese: Once the risotto reaches your desired creaminess, take the pan off the heat. Mix in the remaining 2 tablespoons of butter, heavy cream, and grated Parmesan cheese. Stir until everything is well combined and creamy. Don’t forget to taste and adjust the seasoning with more salt and pepper if necessary.

                  Serve: Spoon the luscious risotto into warm plates or bowls. Garnish generously with freshly chopped parsley and an extra sprinkle of Parmesan cheese if desired for added flavor and visual appeal.
