1/4 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons sesame oil

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1-2 garlic cloves, minced

1 teaspoon freshly grated ginger

1/2 teaspoon red pepper flakes (adjust for heat preference)

1 cup snow peas, trimmed

1 cup carrots, julienned

1/4 cup chopped green onions

2 tablespoons toasted sesame seeds

Fresh cilantro for garnish (optional)

Cook the noodles: Begin by bringing a large pot of salted water to a rolling boil. Add the spaghetti or rice noodles and cook them according to the package instructions until they achieve an al dente texture. Once cooked, drain the noodles and rinse them under cold water to halt the cooking process. Set the noodles aside to drain fully.

    Prepare the sauce: In a medium mixing bowl, add the creamy peanut butter, soy sauce, sesame oil, rice vinegar, honey or maple syrup, minced garlic, grated ginger, and red pepper flakes. Use a whisk to combine all the ingredients until the mixture is smooth and well integrated. Set the sauce aside.

      Sauté the vegetables: In a large skillet over medium heat, add a splash of water or a teaspoon of oil. Once heated, add the snow peas and julienned carrots to the skillet, sautéing them for about 3-4 minutes, or until they become tender yet retain a slight crispness.
