1 cup cherry tomatoes, halved

1 cup fresh spinach

Cook the Pasta: In a large pot, bring a generous amount of salted water to a boil. Add the penne pasta and cook according to the package instructions until it reaches al dente texture, typically about 8-10 minutes. Drain the pasta in a colander and set it aside, making sure to reserve a small cup of pasta cooking water in case you need to thin out the sauce later.

    Sauté the Chicken: While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Season the bite-sized chicken pieces with salt and pepper. Once the oil is hot, add the chicken to the skillet in a single layer.
