1 whole head of garlic

2 tablespoons olive oil

1 cup heavy cream

1 cup freshly grated Parmesan cheese

4 tablespoons unsalted butter

Pinch of nutmeg (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Take the whole head of garlic and slice about 1/4 inch off the top to expose the cloves. Drizzle 1 tablespoon of olive oil over the cut surface, then wrap the garlic head tightly in aluminum foil. Place it in the oven and roast for 30-35 minutes, or until the cloves feel soft to the touch and are golden brown. Once roasted, allow the garlic to cool for a few minutes, then squeeze the cloves out into a small bowl and mash them into a smooth paste.

    Cook the Pasta: While the garlic is roasting, bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to the package instructions until it reaches al dente. Before draining, reserve about 1 cup of the pasta cooking water. Drain the pasta and set aside.

      Prepare the Alfredo Sauce: In a large skillet over medium heat, melt the unsalted butter. Once melted, add the mashed roasted garlic and sauté for 1-2 minutes to release its flavor. Slowly pour in the heavy cream while stirring continuously to combine. Allow the mixture to come to a gentle simmer, stirring occasionally.

        Incorporate the Cheese: Gradually add the freshly grated Parmesan cheese to the skillet, whisking constantly until the cheese fully melts and the sauce becomes creamy and smooth. If you find the sauce too thick for your liking, add the reserved pasta water, one tablespoon at a time, until you achieve your desired consistency.
