1 head of garlic

1 can (15 oz) chickpeas, drained and rinsed thoroughly

1/4 cup tahini (sesame seed paste)

3 tablespoons fresh lemon juice (about 1 lemon)

3 tablespoons extra virgin olive oil, plus additional for drizzling

1 teaspoon ground cumin

1/2 teaspoon smoked paprika, with extra reserved for garnish

Salt and freshly ground black pepper, to taste

3-4 tablespoons water (more if needed to adjust consistency)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Using a sharp knife, slice the top off the head of garlic to expose the tops of the cloves. Drizzle approximately 1 teaspoon of olive oil over the exposed cloves and wrap the garlic head in aluminum foil. Place it in the oven and roast for 30-35 minutes, or until the garlic is soft and caramelized. Once done, let it cool for a few minutes. Then, squeeze the roasted cloves out of their skins and set them aside.

    Combine Ingredients: In a food processor, add the roasted garlic, drained chickpeas, tahini, fresh lemon juice, olive oil, ground cumin, smoked paprika, and a pinch of salt and pepper.

      Blend Until Smooth: With the lid secured, turn on the food processor and blend the mixture for 1-2 minutes, or until it becomes creamy and smooth. If the hummus is too thick, slowly add water, one tablespoon at a time, until you achieve your desired consistency.

        Taste and Adjust: Taste your hummus and adjust the seasoning as needed. You can add more salt, a splash of lemon juice, or an additional pinch of spices for extra flavor.
