2 tablespoons olive oil

Salt and pepper, to taste

4 cloves of garlic, minced

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional for added heat)

1 cup heavy cream

½ cup grated Parmesan cheese

12 oz spaghetti or your preferred pasta

Fresh basil leaves, for garnish

Additional grated Parmesan cheese, for serving

Preheat the Oven: Begin by setting your oven to preheat at 400°F (200°C) to prepare for roasting the tomatoes.

    Roast the Tomatoes: On a large baking sheet, combine the cherry tomatoes with the olive oil, and season with salt and pepper. Add the minced garlic, dried oregano, and red pepper flakes (if you're using them). Toss everything together until the tomatoes are well coated. Spread the tomatoes out in a single layer on the baking sheet. Place them in the preheated oven and roast for about 25-30 minutes, or until the tomatoes are blistered and have started to caramelize, releasing their natural sweetness.

      Cook the Pasta: While the tomatoes are roasting, bring a large pot of salted water to a rapid boil. Add the spaghetti (or your chosen pasta) and cook according to the package instructions until it reaches al dente texture. Once cooked, drain the pasta, making sure to reserve about 1 cup of the pasta cooking water for later use.
