8 oz. fettuccine or your pasta of choice

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

4 cups fresh spinach, packed

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for heat)

Salt and freshly cracked black pepper, to taste

1/2 cup sun-dried tomatoes, chopped

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the pasta water, then drain the rest and set the pasta aside.

    Sauté the Vegetables: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, add the finely chopped onion. Sauté for approximately 3-4 minutes, or until the onion becomes translucent. Add the minced garlic and continue cooking for an additional 1-2 minutes, stirring frequently until fragrant.

      Incorporate Spinach: Gradually add the packed fresh spinach to the skillet. Stir continuously until the spinach wilts down, which should take about 2-3 minutes.

        Create the Creamy Base: Reduce the heat to low and pour in the heavy cream. Stir gently to combine and allow it to simmer for a couple of minutes, which will help the flavors blend together.
