2 medium sweet potatoes, peeled and cubed

8 oz elbow macaroni or your preferred pasta

1 cup milk (choose whole, almond, or oat milk for a dairy-free option)

1 cup sharp cheddar cheese, grated

1/2 cup mozzarella cheese, grated

1/4 cup cream cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon nutmeg

Salt and freshly ground black pepper, to taste

1/2 cup breadcrumbs (panko is a great choice)

2 tablespoons olive oil or melted butter

Fresh parsley or chives for garnish (optional)

Instructions
 

Prepare the Sweet Potatoes: In a medium pot, bring a generous amount of salted water to a boil. Add the cubed sweet potatoes and cook for about 10-15 minutes or until they are fork-tender. Drain the sweet potatoes and mash them until smooth. Set aside for later use.

    Cook the Pasta: Using the same pot, bring fresh water back to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Once cooked, drain the pasta and return it to the pot.

      Make the Cheese Sauce: In a medium saucepan over medium heat, combine the milk, cooked and mashed sweet potatoes, garlic powder, onion powder, nutmeg, and a pinch of salt and pepper. Stir continuously until the mixture is well blended and heated through—be careful not to let it reach a boil.

        Incorporate the Cheese: Remove the saucepan from the heat. Add in the grated cheddar cheese, mozzarella cheese, and cream cheese. Stir until all the cheeses have melted into a creamy sauce.

          Combine Pasta and Sauce: Pour the luscious cheese sauce over the cooked pasta in the pot. Stir to ensure that every piece of pasta is thoroughly coated. Taste and adjust seasoning if needed.
