Ingredients

2 cups canned chickpeas, drained and rinsed

1 tablespoon vegetable oil

1 large onion, finely chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

2 teaspoons garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon smoked paprika

½ teaspoon ground turmeric

1 can (14 oz) diced tomatoes with their juices

1 cup coconut milk (full-fat for extra creaminess)

1 tablespoon tomato paste

Salt, to taste

Fresh cilantro, chopped (for garnish)

Instructions

Sauté Aromatics: In a large skillet, heat the vegetable oil over medium heat. Add the finely chopped onion and cook for about 5 minutes, or until it turns translucent and begins to soften. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

Toast the Spices: Sprinkle in the garam masala, ground cumin, ground coriander, smoked paprika, and ground turmeric. Mix well and allow the spices to toast for 1-2 minutes, stirring continuously until their aromas are released.

Incorporate Tomatoes: Add the diced tomatoes along with their juices to the skillet, then mix in the tomato paste. Stir thoroughly to combine all ingredients and let the mixture simmer for approximately 5 minutes. This will allow the flavors to develop and blend beautifully.

Add Chickpeas: Gently fold in the rinsed chickpeas, ensuring they are well coated in the spice mixture.

Create the Creamy Sauce: Pour in the coconut milk and bring the entire mixture to a gentle simmer. Allow it to cook for 10-15 minutes, stirring occasionally to prevent sticking, until the sauce thickens slightly. Taste and season with salt as needed.

Garnish & Serve: Once cooked, remove the skillet from heat and let cool for a few minutes to allow the flavors to settle. Garnish generously with freshly chopped cilantro before serving.

Delicious Pairing: Serve your creamy tikka masala chickpeas over fluffy basmati rice or alongside warm naan bread for a truly delightful and comforting meal!
