Creamy Tomato Basil Pasta

1 can (28 oz) crushed tomatoes

1 teaspoon sugar

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for heat)

Salt and freshly ground black pepper, to taste

1 cup heavy cream

1 cup fresh basil leaves, torn into smaller pieces

1/2 cup freshly grated Parmesan cheese

Additional basil and cheese for garnish

Cook the Pasta: Fill a large pot with water, adding a generous pinch of salt, and bring it to a boil. Add the fettuccine, cooking it according to package instructions until it's al dente. Once cooked, reserve 1 cup of the pasta water, then drain the remaining water and set the cooked pasta aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds, stirring frequently, until the garlic becomes fragrant but not browned.

      Add Tomatoes and Seasoning: Carefully pour the crushed tomatoes into the skillet with the garlic. Stir in the sugar, dried oregano, and red pepper flakes, if desired, along with a pinch of salt and freshly ground black pepper. Bring the mixture to a gentle simmer and let it cook for about 10 minutes, allowing the sauce to thicken slightly while stirring occasionally.
