Ingredients

12 oz (340g) penne pasta

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for heat)

Salt and freshly ground black pepper, to taste

1 cup heavy cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain the pasta and set it aside.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 5 minutes or until it becomes soft and translucent. Next, stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Make the Sauce: Pour in the crushed tomatoes to the skillet. Season with dried oregano, dried basil, optional red pepper flakes, and a pinch of salt and pepper. Allow the sauce to simmer on low heat for about 10 minutes, letting the flavors meld beautifully.

Combine Pasta and Sauce: Reduce heat to low and carefully stir in the heavy cream until fully incorporated. Add the cooked penne pasta to the skillet, tossing it in the sauce until the pasta is evenly coated and creamy.

Incorporate the Cheese: Save 1/2 cup of the shredded mozzarella for topping. Add the remaining mozzarella and all of the grated Parmesan cheese to the pasta mixture. Stir well until the cheeses are melted and combined into the pasta.

Transfer to Baking Dish: Lightly grease a 9x13 inch (23x33 cm) baking dish. Pour the creamy pasta mixture into the dish, spreading it evenly. Finish by sprinkling the reserved mozzarella cheese on top.

Bake to Perfection: Place the dish in your preheated oven and bake for 25-30 minutes or until the cheese on top is bubbly and golden brown.

Garnish and Serve: Once baked, remove the dish from the oven and let it cool for a few minutes. Garnish generously with fresh basil leaves for a vibrant touch before serving.

Enjoy your creamy and cheesy delight!
