8 oz (225g) pasta (fettuccine or penne recommended)

2 tablespoons extra virgin olive oil

3 cloves garlic, finely minced

1 can (14 oz) crushed tomatoes

½ cup heavy cream

1 cup fresh basil leaves, roughly chopped (plus extra for garnish)

½ teaspoon red pepper flakes (optional, for a spicy kick)

Salt and freshly cracked pepper, to taste

½ cup grated Parmesan cheese (plus extra for serving)

1 teaspoon balsamic vinegar (for a touch of sweetness)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Remember to reserve ½ cup of the starchy pasta water before draining. Drain the pasta and set it aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for 1-2 minutes until it becomes fragrant, being careful not to let it brown, as this can give a bitter taste.
