2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, including the juices

1 cup heavy cream

½ teaspoon red pepper flakes (optional for heat)

4 cups fresh spinach

½ cup grated Parmesan cheese

Salt and pepper to taste
