Creamy Tzatziki Chicken Skewers

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup plain Greek yogurt

1 medium cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

Skewers (if using wooden, soak in water for 30 minutes prior)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine olive oil, lemon juice, smoked paprika, salt, and black pepper to create a marinade. Add the chicken cubes, ensuring each piece is well-coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to overnight) to enhance flavor.

    Prepare the Tzatziki Sauce: While the chicken marinates, make the tzatziki. In a separate bowl, combine the plain Greek yogurt, grated cucumber, minced garlic, and chopped dill. Add a pinch of salt and mix thoroughly until smooth. Taste and adjust seasoning as desired. Cover and refrigerate until you're ready to serve.

      Skewering the Chicken: Preheat your grill or grill pan over medium-high heat. Take the marinated chicken from the refrigerator and thread the pieces onto the skewers. Ensure to leave small gaps between pieces for even cooking and better grill marks.

        Grill the Skewers: Place the chicken skewers on the grill and cook for approximately 12-15 minutes, turning them every few minutes. Your chicken is done when it reaches an internal temperature of 165°F (75°C) and is beautifully browned.
