Crispy Air Fryer Falafel Wraps

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup fresh parsley, finely chopped

1/4 cup fresh cilantro, finely chopped

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/4 cup bread crumbs (either panko or regular)

2 tbsp olive oil

4 large whole wheat wraps or pita breads

1 cup lettuce, shredded

1 ripe tomato, diced

1 cucumber, sliced

1/2 cup tahini sauce (or your preferred sauce)

Prepare the Chickpeas: In a food processor, combine the drained chickpeas, parsley, cilantro, onion, minced garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse the mixture until it reaches a coarse consistency, being careful not to overprocess—some texture should remain.

    Form the Falafel Mixture: Transfer the mixture to a large mixing bowl. Gradually stir in the bread crumbs until the mixture is firm enough to hold together. If it feels too wet, continue adding a little more bread crumbs until it’s manageable for shaping.

      Shape the Falafel: Using your hands, form the mixture into small balls or patties, about the size of a golf ball, ensuring they are compact and well-formed.

        Preheat the Air Fryer: Set your air fryer to preheat at 375°F (190°C) for approximately 5 minutes to prepare for cooking.
