1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons extra-virgin olive oil

1/2 teaspoon onion powder

1/2 teaspoon ground cumin

1/4 teaspoon cayenne pepper (optional, for a spicy kick)

1/2 cup your favorite BBQ sauce

1 head of romaine or butter lettuce (for the boats)

1/2 cup cherry tomatoes, halved

1 ripe avocado, diced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven: Set your oven to preheat at 400°F (200°C) so it's hot and ready for the chickpeas.

    Prepare the Chickpeas: In a large mixing bowl, combine the drained chickpeas with olive oil, smoked paprika, garlic powder, onion powder, cumin, cayenne pepper (if you like spice), salt, and pepper. Mix thoroughly to ensure each chickpea is coated evenly.

      Bake the Chickpeas: Spread the seasoned chickpeas out in a single layer on a baking sheet lined with parchment paper. Bake them in the preheated oven for 25-30 minutes, shaking the pan halfway through to promote even crispiness. They should come out golden and crunchy.
