Crispy Chickpea & Tomato Wraps

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

4 large whole wheat tortillas or wraps

1 cup lettuce or spinach leaves

1/2 cup plain Greek yogurt or a plant-based yogurt alternative

1/4 teaspoon cayenne pepper (optional; for extra heat)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it’s ready for roasting the chickpeas.

    Prepare the Chickpeas: On a large baking sheet, spread out the drained and rinsed chickpeas evenly. Drizzle with olive oil and sprinkle over the smoked paprika, garlic powder, ground cumin, along with salt and pepper. Toss the chickpeas thoroughly to ensure even coating with the spices, then arrange them in a single layer.

      Roast the Chickpeas: Place the baking sheet in the preheated oven and roast the chickpeas for about 25-30 minutes, or until they achieve a golden brown color and a crispy texture. Make sure to shake the pan halfway through roasting for even cooking.

        Mix the Tomato Filling: While the chickpeas are roasting, prepare the fresh tomato filling. In a large mixing bowl, combine the halved cherry tomatoes, finely chopped red onion, fresh cilantro, and lime juice. Lightly season with salt and pepper to taste. Gently toss the mixture to combine and set aside to allow the flavors to meld.

          Prepare the Wraps: Once the chickpeas are done roasting, remove them from the oven and let them cool for a few minutes to maintain some crunch.

            Assemble the Wraps: Take each whole wheat tortilla and layer a handful of crisp lettuce or spinach leaves in the center. Spoon a generous amount of the tomato mixture on top of the greens, followed by a hearty sprinkle of the roasted chickpeas.
