1 small onion, finely chopped

2-3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking powder

Salt and freshly ground black pepper, to taste

1-2 tablespoons all-purpose flour (if needed for binding)

Oil for frying (vegetable or canola)

For the Pita Pockets:

4 pieces whole wheat pita bread

1 cup lettuce, finely shredded

1 large tomato, diced

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup pickles (optional)

For the Tahini Sauce:

1/4 cup tahini

1 garlic clove, minced

2 tablespoons fresh lemon juice

Water, as needed for thinning

Salt, to taste

Instructions

Prepare the Falafel Mixture:

    - In a food processor, combine the soaked chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse the mixture until it becomes a coarse, uniform paste. If the mixture appears too dry or crumbly, incorporate a tablespoon of flour to help bind it.

      Form the Falafel Balls:

        - With your hands, shape the mixture into small balls or patties, roughly 1.5 inches in diameter. Arrange them on a plate and refrigerate for a minimum of 30 minutes. This step helps the falafel maintain their shape during frying.

          Fry the Falafel:

            - Heat a generous amount of oil in a deep skillet or saucepan over medium heat. Once the oil is hot (test by dropping in a small piece of the mixture; it should sizzle), carefully add the falafel balls in batches. Ensure not to overcrowd the pan. Fry for 3-4 minutes on each side, until they are golden brown and crispy. Use a slotted spoon to transfer the falafel to a plate lined with paper towels for draining excess oil.

              Make the Tahini Sauce:

                - In a mixing bowl, combine tahini, minced garlic, and lemon juice. Gradually incorporate water, whisking until the sauce reaches a smooth and pourable consistency. Adjust the thickness with more water if necessary. Add salt to taste for flavor enhancement.

                  Assemble the Pita Pockets:

                    - Lightly warm the pita bread in a dry skillet or microwave until pliable. Carefully cut each pita in half to create pockets. Generously stuff each pocket with shredded lettuce, diced tomatoes, cucumber, sliced red onion, pickles (if desired), and 2-3 falafel balls.

                      Drizzle and Serve:

                        - Drizzle a generous amount of tahini sauce over the filled falafel pockets. Serve immediately while the falafel are still warm and have retained their crispy texture.

                          Prep Time, Total Time, Servings:

                            - Prep Time: 20 minutes | Total Time: 1 hour 10 minutes | Servings: 4

                              - Presentation Tips: Arrange the pita pockets on a serving platter garnished with extra cucumber and tomato slices. Consider serving with a small bowl of tahini sauce on the side for dipping.
