14 oz (400g) firm tofu, pressed and drained

1 cup all-purpose flour (or gluten-free flour for a gluten-free option)

1 cup panko breadcrumbs

1/2 cup nutritional yeast

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1/2 cup unsweetened plant milk (such as almond or soy)

2 tablespoons soy sauce

2 cloves garlic, minced

Oil for frying (coconut or avocado oil recommended)

Instructions
 

Prepare the Tofu:

    Begin by cutting the pressed tofu into bite-sized cubes or triangles according to your preference. Aim for uniform sizes to ensure even cooking.

      Mix the Wet Batter:

        In a medium bowl, whisk together the unsweetened plant milk, soy sauce, and minced garlic until combined and smooth.

          Prepare the Dry Coating:

            In a separate bowl, whisk together the all-purpose flour, nutritional yeast, garlic powder, onion powder, oregano, thyme, paprika, salt, and pepper until well blended.

              Panko Mixture:

                In another bowl, pour the panko breadcrumbs. For an extra flavor punch, feel free to blend in additional garlic powder or dried herbs to the breadcrumbs.

                  Coating the Tofu:

                    Take each piece of tofu and first dip it into the wet batter, allowing any excess batter to drip off. Next, dredge the tofu in the flour mixture, ensuring it’s fully coated before rolling it in the panko breadcrumbs. Press gently into the breadcrumbs to ensure they stick well.

                      Heat the Oil:

                        In a large skillet, pour in enough oil to cover about 1/4 inch deep. Heat the oil over medium heat. Check if the oil is ready by dropping in a breadcrumb; it should sizzle immediately when the oil is hot enough.

                          Fry the Nuggets:

                            Carefully place the coated tofu nuggets into the hot oil, frying them in batches to prevent overcrowding. Cook each side for about 3-4 minutes until they are golden brown and crispy, adjusting the heat as necessary to maintain a steady frying temperature.

                              Drain Excess Oil:

                                Once golden and crispy, use a slotted spoon to transfer the nuggets onto a plate lined with paper towels to absorb any excess oil. Sprinkle with additional salt if desired while they are still hot.
