1 lb Brussels sprouts, trimmed and halved

3 tablespoons extra virgin olive oil

4 cloves of garlic, minced finely

1 teaspoon sea salt

½ teaspoon freshly ground black pepper

½ teaspoon red pepper flakes (optional for a little heat)

½ cup freshly grated Parmesan cheese

2 tablespoons balsamic vinegar

Fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high temperature is key for achieving a perfect crispy texture on the outside of the Brussels sprouts while keeping the insides tender and flavorful.

    Prepare the Brussels Sprouts: Rinse the Brussels sprouts thoroughly under cold water to clean them. Next, trim the tough stem ends and remove any discolored or wilted outer leaves. Slice each sprout in half from top to bottom to ensure even cooking.

      Season the Sprouts: In a large mixing bowl, combine the halved Brussels sprouts with olive oil, minced garlic, sea salt, black pepper, and red pepper flakes (if you’re adding them). Use your hands or a spoon to toss everything together until all the sprouts are evenly coated with the seasoning blend.

        Roast the Brussels Sprouts: Spread the seasoned Brussels sprouts in a single layer on a baking sheet lined with parchment paper or a silicone mat to prevent sticking. Make sure they are spaced out evenly for roasting.

          Add Parmesan: After roasting the Brussels sprouts for approximately 20 minutes, take them out of the oven. Sprinkle the freshly grated Parmesan cheese generously over the top of the hot sprouts. Return the baking sheet to the oven and roast for another 10-15 minutes, or until the Brussels sprouts are golden brown and irresistibly crispy.
