2 ripe avocados, halved and pitted

1 cup panko breadcrumbs

½ cup finely grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon freshly ground black pepper

2 large eggs

1 tablespoon water

Cooking oil for frying (canola or vegetable)

Preheat the Oven (Optional): If you would like to bake the fries instead of frying, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare the Avocados: With a sharp knife, carefully slice the avocados in half, remove the pits, and gently scoop out the flesh. Cut the avocado halves into wedges, approximately 1-inch thick for optimal frying and texture.

      Set Up Dipping Stations: In a shallow bowl, whisk together the eggs and water until the mixture is smooth and well-blended. In another shallow bowl, combine the panko breadcrumbs, finely grated Parmesan cheese, garlic powder, smoked paprika, salt, and freshly ground black pepper. Mix well to ensure an even distribution of the seasoning.

        Bread the Avocado Wedges: Take each avocado wedge and first dip it into the egg mixture, allowing any excess to drip off. Then, carefully coat each wedge in the panko-Parmesan mixture, pressing lightly to promote an even and thorough coating of the crumbs.

          Fry the Wedges: In a large skillet, pour in enough oil to cover about ½ inch of the bottom. Heat over medium heat until the oil shimmers and is hot.
