Ingredients

2 ripe avocados

1 cup panko breadcrumbs

1/2 cup freshly grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon freshly ground black pepper

1/4 teaspoon salt

1/2 cup all-purpose flour

2 large eggs

Cooking spray or a drizzle of olive oil for extra crispiness

Fresh cilantro leaves and lime wedges for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to facilitate easy cleanup afterward.

Prepare the Avocados: Carefully cut the avocados in half, remove the pit, and gently scoop out the flesh. Slice each half into 4-6 wedges, depending on your preferred thickness for fries. Set the wedges aside for coating.

      Create the Breading Station:

        - In a shallow dish, place the all-purpose flour.

          - In a separate shallow dish, beat the eggs until the yolks and whites are fully combined and the mixture is smooth.

            - In a third shallow dish, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt. Stir until well combined to ensure even distribution of the seasonings.

Coat the Avocado Wedges: Taking one avocado wedge at a time, first coat it in the flour, shaking off any excess flour. Next, dip the wedge into the beaten eggs, allowing the excess to drip off. Finally, roll it in the Parmesan-panko mixture, pressing gently so the coating adheres well. Repeat this process for all avocado wedges.

Arrange on Baking Sheet: Lay the coated avocado fries on the prepared baking sheet in a single layer to avoid overcrowding. For enhanced crispiness, lightly spray or drizzle olive oil over the fries.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the fries are golden brown and crispy. Flip the fries halfway through the baking time to ensure even cooking and browning.

Serve: Once they are done baking, remove the avocado fries from the oven and let them cool for a couple of minutes before serving. For added freshness, garnish with sprigs of cilantro and lime wedges if desired.
