Ingredients

1 lb (about 450g) large carrots, peeled and cut into fry shapes

1/2 cup grated Parmesan cheese

1/2 cup panko breadcrumbs (for an extra crunchy texture)

2 tablespoons extra-virgin olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon freshly ground black pepper

1/2 teaspoon salt

Fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.

Prepare the Carrots: In a spacious bowl, add the cut carrot fries and drizzle the olive oil over them. Toss the carrots thoroughly until they are evenly coated with the oil, ensuring every fry has a nice slick of oil.

Mix the Coating: In a separate bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, smoked paprika, black pepper, and salt. Stir the mixture well until all the dry ingredients are evenly mixed, creating a flavorful coating.

Coat the Carrots: Taking a handful of the coated carrots at a time, dip them into the breadcrumb mixture, pressing gently to ensure an even coating clings to each fry. Once coated, place the carrot fries in a single layer on the prepared baking sheet, making sure they aren't overcrowded.

Bake to Perfection: Transfer the baking sheet to the preheated oven. Bake for 20 to 25 minutes, flipping the fries halfway through to ensure they cook evenly. Keep an eye on them toward the end; they should turn a beautiful golden brown and become crispy.

Garnish and Serve: After baking, remove the fries from the oven and allow them to cool for a couple of minutes. For an added touch, sprinkle the freshly chopped parsley over the top. Serve the crispy carrot fries warm alongside your favorite dipping sauce, and enjoy the delicious crunch!
