Crispy Sriracha Tofu Lettuce Wraps

Ingredients
  

1 block firm tofu, well-drained and pressed

2 tablespoons cornstarch

1 tablespoon vegetable oil

½ cup Sriracha sauce (adjust to taste)

1 tablespoon soy sauce

1 tablespoon honey or agave syrup

1 tablespoon rice vinegar

1 teaspoon garlic powder

½ teaspoon ginger powder

1 head of butter lettuce or iceberg lettuce, leaves carefully separated

1 cup shredded carrots

½ cup sliced cucumbers

¼ cup chopped fresh cilantro

¼ cup sliced green onions

Sesame seeds for garnish (optional)

Prepare the Tofu: Cut the pressed tofu into small cubes, approximately 1 inch in size. Use a paper towel to pat the cubes dry thoroughly, removing any excess moisture to help them crisp up during cooking.

    Coat the Tofu: In a medium mixing bowl, add the tofu cubes and sprinkle them with the cornstarch. Gently toss the cubes until they are evenly coated with the cornstarch, ensuring every piece is covered for a perfectly crispy texture later on.

      Fry the Tofu: Heat the vegetable oil in a non-stick skillet over medium-high heat. Once hot, add the tofu cubes in a single layer (you may need to fry them in batches if your skillet is small). Fry the tofu for about 3-4 minutes on each side or until they are golden brown and delightfully crispy. When done, remove the tofu from the skillet and set aside on a plate lined with paper towels.

        Make the Sriracha Sauce: In a small mixing bowl, combine the Sriracha sauce, soy sauce, honey (or agave syrup), rice vinegar, garlic powder, and ginger powder. Whisk well until fully combined, and taste the sauce, adding more Sriracha if you prefer a spicier kick.

          Combine: Using the same skillet where you fried the tofu, return the crispy tofu cubes to the heat and pour in the Sriracha sauce mixture. Gently toss the tofu in the sauce for about 1-2 minutes, allowing the sauce to coat the tofu evenly and glaze it beautifully.

            Assemble the Wraps: Take a fresh lettuce leaf and place a few pieces of the Sriracha-glazed tofu in the center. Top with a handful of shredded carrots, some sliced cucumbers, a sprinkle of chopped cilantro, and a few slices of green onions for an added burst of freshness.
