1 tablespoon fish sauce (or soy sauce for a vegetarian option)

1 teaspoon granulated sugar

1/2 teaspoon salt

1/2 teaspoon freshly cracked black pepper

12 rice paper wrappers

Prepare the Filling: In a large mixing bowl, combine the shredded cabbage, grated carrots, bean sprouts, diced shiitake mushrooms, ground pork (or crumbled tofu), sliced green onions, fish sauce (or soy sauce), sugar, salt, and black pepper. Mix thoroughly with your hands or a spatula until all ingredients are well incorporated.

    Moisten the Wrappers: Pour warm water into a shallow dish. Dip one rice paper wrapper into the water for approximately 10-15 seconds, or until it becomes soft and pliable. Carefully remove the wrapper and lay it flat on a clean, dry surface.

      Assemble the Rolls: Take about 2 tablespoons of the filling and place it near the edge of the wrapper closest to you. Fold the sides of the wrapper over the filling, then roll the wrapper away from you to form a tight cylinder. Ensure the filling is sealed inside by gently pressing the edges together.
