1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

8 oz (225g) pasta (penne or fusilli recommended)

1 cup frozen peas

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup heavy cream or half-and-half

1 medium onion, finely chopped

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: Begin by cutting the chicken into bite-sized pieces. In a bowl, season the chicken pieces with salt, pepper, and Italian seasoning, ensuring they are evenly coated.

    Combine Ingredients: In a 6-quart crockpot, add the chopped onion and minced garlic. Layer the seasoned chicken pieces over the onions and garlic. Next, pour in the cream of chicken soup, chicken broth, and heavy cream or half-and-half. Finally, add the pasta to the mixture. Stir everything well to combine all the ingredients.

      Cook: Cover the crockpot with its lid and set it to cook on low for about 4 to 5 hours. Check for doneness; the chicken should be cooked through, and the pasta should be tender.
