Ingredients

For the Zucchini Chips:

2 medium zucchinis

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Optional: A pinch of cayenne pepper for a spicy kick

For the Garlic Aioli:

1/2 cup mayonnaise (preferably homemade or high-quality store-bought)

2 cloves garlic, minced (or more for a bolder flavor)

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

Salt and freshly ground black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 225°F (110°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Zucchini: Thoroughly wash and dry the zucchinis. Using a mandoline slicer or a sharp knife, slice them very thinly—about 1/8 inch thick. Place the zucchini slices into a large mixing bowl, ensuring they are prepared for seasoning.

Season the Chips: In a small bowl, whisk together the olive oil, garlic powder, onion powder, dried oregano, dried thyme, smoked paprika, salt, pepper, and cayenne pepper (if desired). Pour this flavorful mixture over the zucchini slices and gently toss until each slice is evenly coated with the seasoning.

Arrange for Baking: Lay the seasoned zucchini slices in a single layer on the prepared baking sheet, making sure they do not overlap to ensure crispness. Bake in the preheated oven for approximately 2 hours, flipping the chips halfway through the baking time, until they turn golden brown and crispy.

Make the Garlic Aioli: While the zucchini chips are baking, prepare the garlic aioli. In a medium-sized mixing bowl, combine the mayonnaise, minced garlic, fresh lemon juice, and Dijon mustard. Stir the ingredients together until well blended. Taste and adjust the seasoning with salt and pepper as needed. Set the aioli aside in the refrigerator until you are ready to serve.

Serve and Enjoy: Once the zucchini chips are finished baking, remove them from the oven and allow them to cool for a few minutes on the baking sheet. Transfer the crispy chips to a serving platter and sprinkle with freshly chopped parsley for an added burst of color. Serve alongside the homemade garlic aioli for dipping.

              Prep Time: 15 minutes | Total Time: 2 hours 15 minutes | Servings: 4

                Presentation Tips:

For an elegant touch, consider serving the garlic aioli in a small bowl at the center of the platter, surrounded by the zucchini chips. Add a few lemon wedges and extra parsley sprigs for garnish to enhance visual appeal. Enjoy your deliciously crispy snack!
