4 large tortillas (flour or whole wheat)

6 large eggs

1/2 cup whole milk

1 cup shredded cheddar cheese

1 cup chopped cooked bacon or sausage

1 cup diced bell peppers (mix of red and green for color)

1/2 cup diced onions

1 teaspoon garlic powder

Salt and pepper, to taste

1 tablespoon olive oil

Cooking spray (for air fryer)

Prep the Filling: In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined. Heat the olive oil in a non-stick skillet over medium heat. Add the diced onions and bell peppers, sautéing for about 3-4 minutes until the vegetables are tender. Pour in the egg mixture and cook, stirring frequently, until the eggs are fully scrambled and cooked through. Once done, remove from heat and set aside.

    Combine Ingredients: Stir the chopped bacon or sausage into the scrambled egg mixture, ensuring the protein is evenly distributed. Gently fold in the shredded cheddar cheese until it melts slightly into the warm filling.

      Assemble the Wraps: Lay a large tortilla flat on a clean surface. Spoon a generous amount of the egg and cheese mixture into the center of each tortilla. Fold the sides inward and roll the tortilla tightly from the bottom towards the top, making sure to encase the filling securely. Repeat this process for all tortillas.

        Prepare for Air Frying: Preheat your air fryer to 380°F (193°C). Lightly coat the air fryer basket with cooking spray to prevent sticking. Apply a thin layer of olive oil to the outside of each wrapped tortilla to encourage a golden-brown, crunchy exterior during cooking.

          Air Fry the Wraps: Arrange the wrapped tortillas seam-side down in the air fryer basket. You may need to cook them in batches to avoid overcrowding. Air fry for approximately 8-10 minutes, flipping them halfway through for even cooking, until they are crispy and beautifully golden.
