Prepare the Eggplant: To reduce moisture and bitterness, start by salting the eggplant slices. Lay the slices in a single layer on a baking sheet or clean surface. Generously sprinkle both sides with salt and let them sit for about 30 minutes. After the time is up, rinse the slices thoroughly under cold running water to remove excess salt. Pat them dry with paper towels to ensure they are moisture-free.

    Set Up Your Breading Station: In a shallow bowl, whisk together the eggs and olive oil until well combined. In another shallow bowl, mix the Panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, and a pinch of salt and pepper.
