2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

4 large whole wheat tortillas or wraps

1 cup shredded lettuce

1 cup diced tomatoes

½ cup diced red onion

½ cup shredded cheese (optional; substitute with vegan cheese if preferred)

Preheat Oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.

    Season Chickpeas: In a medium-sized mixing bowl, combine the drained and rinsed chickpeas with olive oil, smoked paprika, garlic powder, onion powder, ground cumin, and a sprinkle of salt and black pepper. Toss the chickpeas gently until they are fully coated in the oil and spices, ensuring an even distribution.

      Roast Chickpeas: Spread the seasoned chickpeas onto the prepared baking sheet in a single even layer. Roast in the preheated oven for 25 to 30 minutes, stirring halfway through the cooking time, until the chickpeas are golden brown and exhibit a crunchy texture.
