Ingredients

2 medium zucchinis

1 cup panko breadcrumbs (for an extra crunch)

1/2 cup finely grated Parmesan cheese

1 tablespoon fresh lemon zest (approximately from 1 lemon)

2 teaspoons dried dill weed

1 teaspoon garlic powder

1/2 teaspoon fine sea salt

1/4 teaspoon freshly cracked black pepper

2 large eggs

1 tablespoon fresh lemon juice

Olive oil spray (for a crispy finish)

Instructions

Preheat the Oven: Set your oven to preheat at 425°F (220°C). Line a baking sheet with parchment paper for easy removal and cleanup later.

Prepare the Zucchini: Thoroughly wash and dry the zucchinis. Slice each zucchini into 1/4-inch thick rounds, ensuring uniformity for even cooking.

Make the Breading Mixture: In a large mixing bowl, combine the panko breadcrumbs, finely grated Parmesan cheese, lemon zest, dried dill weed, garlic powder, sea salt, and black pepper. Stir well to ensure an even distribution of all the ingredients.

Prepare the Egg Wash: In a small bowl, whisk together the eggs and fresh lemon juice until fully blended, creating a smooth egg wash.

Coat the Zucchini Slices: Dip each zucchini round into the egg wash, allowing excess liquid to drip off. Then, transfer the zucchini slices to the breadcrumb mixture, making sure to coat them well on all sides. Arrange the coated slices in a single layer on the prepared baking sheet.

Spray and Bake: Lightly mist the tops of the zucchini slices with olive oil spray; this will help them achieve a beautiful golden color as they bake. Place the baking sheet in the preheated oven and bake for 20-25 minutes, flipping the slices halfway through, until they are crispy and golden brown.

Serve: After baking, remove the zucchini slices from the oven and let them cool for a few moments. Enjoy them warm as a delicious appetizer or side dish. For an extra burst of flavor, drizzle with additional fresh lemon juice before serving.
