2 large cucumbers, peeled and diced

2 ripe avocados, pitted and flesh scooped out

1 cup Greek yogurt (or a dairy-free alternative)

1 cup chilled vegetable broth

2 tablespoons freshly squeezed lime juice

1 garlic clove, minced finely

1 tablespoon fresh mint leaves, finely chopped (plus extra for garnish)

1 tablespoon extra virgin olive oil

Salt and black pepper, to taste

Optional: radish slices, for garnish

Prepare the Base: Begin by placing the diced cucumbers, avocado flesh, Greek yogurt, chilled vegetable broth, freshly squeezed lime juice, and minced garlic into a blender. Blend on high speed until the mixture is completely smooth and creamy, pausing occasionally to scrape down the sides of the blender for an even consistency.

    Add Flavor: While the blender is still running, slowly drizzle the extra virgin olive oil into the mixture until it’s fully combined. After that, add the finely chopped mint leaves. Season with salt and black pepper to taste and blend again for an additional 10-15 seconds until the mint is just incorporated.

      Chill the Soup: Pour the blended soup into a large mixing bowl or an airtight container. Cover it well and place it in the refrigerator for a minimum of 1 hour to allow the flavors to develop and the soup to cool completely.
