1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) refried beans

1 can (10 oz) enchilada sauce (red or green)

1 cup shredded cheddar cheese

8 small flour tortillas

1 tsp ground cumin

1 tsp chili powder

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Instructions
 

Preheat Your Oven: Start by preheating your oven to 375°F (190°C) so it's ready when you need it.

    Cook the Ground Beef: In a large skillet over medium heat, add the ground beef. Sauté it for about 5-7 minutes, breaking it apart with a spatula until it's browned and fully cooked. Carefully drain any excess fat from the skillet.

      Sauté the Onions and Garlic: Toss the finely chopped onion and minced garlic into the skillet with the beef. Cook for about 3-5 minutes, stirring occasionally, until the onions become soft and translucent.

        Add Seasoning and Beans: Stir in the refried beans along with the ground cumin, chili powder, salt, and pepper. Mix everything well, allowing it to cook for another 2-3 minutes until the mixture is heated through and well combined.

          Fill the Tortillas: Take a flour tortilla and scoop approximately 1/4 cup of the beef mixture into the center. Sprinkle a little shredded cheddar cheese on top of the filling, then roll the tortilla tightly from the bottom up to enclose the filling completely. Repeat this process with the remaining tortillas.

            Prepare the Baking Dish: Pour 1/2 cup of enchilada sauce onto the bottom of a 9x13 inch baking dish, making sure it's evenly distributed. Place the rolled tortillas seam-side down in the dish, snugly fitting them side by side.
