Ingredients

1 cup fresh corn kernels (or 1 cup frozen corn, thawed and drained)

1 cup all-purpose flour

1/2 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

2 large eggs

1/4 cup milk

1/2 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

1/4 cup finely chopped fresh parsley (optional, for added freshness)

Oil for frying (vegetable or canola oil preferred)

Instructions

Prep the Corn: If you are using fresh corn, carefully slice kernels off the cob to yield about 1 cup. For frozen corn, ensure that it is thoroughly thawed and drained to prevent excess moisture.

Mix the Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour, baking powder, garlic powder, onion powder, smoked paprika, and a generous pinch of salt and pepper. Stir well to evenly distribute the dry ingredients.

Incorporate the Cheeses: Gently fold the shredded cheddar cheese and grated Parmesan into the dry mixture, ensuring the cheese is evenly coated with flour, which helps prevent clumping.

Whisk the Wet Ingredients: In a separate bowl, crack the eggs and whisk them together with the milk until thoroughly combined and frothy.

Combine the Mixtures: Gradually add the wet ingredients to the dry mixture, stirring gently until everything is just combined. Be cautious not to overmix, as this can lead to dense fritters. Carefully fold in the corn and chopped parsley, if using, ensuring an even distribution.

Heat the Oil: In a large skillet or frying pan, pour in enough oil to cover the bottom to a depth of about 1/4 inch. Heat the oil over medium heat until it shimmers and reaches approximately 350°F (175°C).

Fry the Fritters: Using a tablespoon, scoop a mound of batter and carefully drop it into the hot oil. Flatten the fritter slightly with the back of the spoon. Fry in batches, ensuring you don’t overcrowd the pan, which would lower the temperature of the oil.

Cook Until Golden: Fry each fritter for about 3-4 minutes on each side, or until they are golden brown and crispy. Once cooked, use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain excess oil.

Serve: Serve the fritters hot for the best taste and texture. They pair wonderfully with a dipping sauce such as sriracha aioli, ranch dressing, or a zesty squeeze of lime!

                      - Presentation Tips: For an appealing presentation, stack the fritters on a rustic wooden board or a colorful plate, garnished with extra parsley and a small bowl of your chosen dipping sauce on the side.
