1 lb boneless, skinless chicken breasts

4 cups chicken broth (homemade or low-sodium)

1 cup water

1 medium onion, finely diced

3 cloves garlic, minced

2 medium carrots, sliced into rounds

2 celery stalks, chopped

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

1 cup frozen peas (optional)

For the Dumplings:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, melted and slightly cooled

1 cup milk (whole or your preferred version)

1 tablespoon fresh parsley, chopped (for garnish)

Cook the Chicken: In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, sliced carrots, and chopped celery. Sauté for about 5 minutes until the vegetables are softened and fragrant. Next, add the chicken breasts along with the dried thyme, dried rosemary, salt, and black pepper. Pour in the chicken broth and water, bringing the mixture to a gentle simmer. Cover and cook for 20-25 minutes, or until the chicken is fully cooked (no longer pink in the center).

    Shred the Chicken: Carefully remove the chicken breasts from the pot and place them on a cutting board. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the pot and stir. If you’re including frozen peas, add them now and mix gently to combine.

      Prepare the Dumpling Batter: In a medium-sized mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
