2 boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 bell pepper (your choice of red or green), sliced into thin strips

1 medium onion, sliced into rings

2 teaspoons fajita seasoning (store-bought or homemade)

Salt and pepper, to taste

4 large flour tortillas

2 cups shredded cheese (cheddar, Monterey Jack, or a blend of your choice)

Optional toppings: sour cream, guacamole, salsa, sliced avocado, fresh cilantro

Instructions
 

Prep the Chicken: In a large mixing bowl, combine the sliced chicken breast with the fajita seasoning, salt, and pepper. Mix well to ensure that all the chicken pieces are evenly coated with the seasoning.

    Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the seasoned chicken strips to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink in the center. Once cooked, remove the chicken from the skillet and set aside on a plate.

      Sauté the Vegetables: In the same skillet, add the sliced bell pepper and onion. Sauté for approximately 3-4 minutes, or until they become tender and slightly golden. Once cooked, add the chicken back into the skillet and stir to combine with the vegetables evenly.

        Prepare Quesadillas: Lay one tortilla flat on a clean surface. On one half of the tortilla, sprinkle half of the shredded cheese evenly. Add a generous portion of the chicken and vegetable mixture on top of the cheese, and then sprinkle the remaining cheese over the filling. Fold the tortilla over to create a half-moon shape, pressing down lightly to secure the filling.

          Cook Quesadillas: In the same skillet (you may wipe it lightly with a paper towel if needed), add a small drizzle of oil and heat over medium heat. Carefully place the folded quesadilla into the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted thoroughly. Repeat this process with the remaining tortillas.

            Slice and Serve: Once all the quesadillas are cooked, remove them from the skillet. Slice each quesadilla into wedges using a sharp knife, and serve them hot with your choice of toppings, such as sour cream, guacamole, salsa, sliced avocado, and fresh cilantro for garnish.
