1 medium onion, finely diced

3 cloves garlic, minced

2 cans (14 oz each) whole peeled tomatoes, ideally San Marzano

3 cups vegetable broth

1 teaspoon sugar (to balance acidity)

1 cup heavy cream (or coconut milk for a vegan alternative)

1/2 cup fresh basil leaves, chopped

Salt and pepper, to taste

Crusty bread or grilled cheese sandwiches, for serving

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion. Sauté for about 5-7 minutes, stirring occasionally, until the onion is translucent and soft. Then, mix in the minced garlic and continue to cook for an additional 1-2 minutes, until the garlic becomes fragrant, but be careful not to burn it.

    Add the Tomatoes: Carefully pour the canned whole peeled tomatoes along with their juices into the pot. Use a wooden spoon to break up the tomatoes slightly as they cook. Allow this mixture to simmer for about 2-3 minutes, letting the flavors meld together.

      Incorporate the Broth: Add the vegetable broth and sugar to the pot, stirring everything together to combine. Increase the heat slightly to bring the mixture to a gentle simmer. Allow it to simmer uncovered for approximately 20 minutes, giving time for the flavors to develop richly.

        Blend the Soup: After simmering, remove the pot from heat. If you have an immersion blender, use it to puree the soup directly in the pot until smooth and creamy. Alternatively, if using a countertop blender, carefully transfer the hot soup in batches and blend until velvety smooth. Return the blended soup to the pot if you used a countertop blender.

          Make It Creamy: If necessary, place the pot back on low heat. Stir in the heavy cream or coconut milk and gently heat through for about 5 minutes, letting the soup become wonderfully creamy.

            Season and Add Basil: Once warmed, remove the pot from the heat and stir in the chopped fresh basil. Season with salt and freshly cracked pepper to taste, adjusting to your preferences.
