1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

1/4 cup creamy coconut milk

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

2 cloves garlic, finely minced

1 tablespoon fresh ginger, grated

1 teaspoon ground coriander

1/2 teaspoon turmeric powder

Zest and juice of 1 lime

2 green onions, finely sliced

Fresh cilantro, chopped (for garnish)

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior to grilling)

Instructions
 

Make the Marinade: In a large mixing bowl, combine the coconut milk, soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, ground coriander, turmeric powder, lime zest, and lime juice. Whisk thoroughly until all ingredients are well integrated, creating a fragrant marinade that will enhance the chicken's flavor.

    Marinate the Chicken: Add the chicken cubes to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for a minimum of 30 minutes, allowing the flavors to penetrate the meat. For an even richer taste, marinate for up to 2 hours.

      Preheat the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, wait until the coals are glowing red and have a light layer of white ash before cooking.
